Our canning tomatoes are ripening. A bit on the small side this year, 1 3/4″ – 2 1/2″ in diameter, we are selling them for 60¢ per pound to move through them, a 20 pound box cost $12.00. These are an open-pollinated determinate variety chosen for its thick walled fruits, fine flavor, productivity and appearance. We should be harvesting canning tomatoes for about two weeks. RECIPE : Making and Canning Homemade Tomato Salsa from Fresh Tomatoes
Blake at Pickyourown.org has a good recipe that uses 15 pounds of fresh tomatoes, or three quarts of prepared chopped tomatoes which makes about eight pints of salsa. View here, or download and print out PDF version here. The recipe includes these other fresh ingredients:
- 3 cups chopped onions
- 6 jalapeño peppers, seeded, finely chopped
- 4 cloves garlic, finely chopped
- 2 six-ounce cans tomato paste (adds body)
- 2 cups lemon or lime juice
- 1 tablespoon salt (optional)
- 1 tablespoon sugar (optional)
- 1 teaspoon black pepper
- 1 tablespoon ground cumin (optional)
- 2 tablespoons oregano leaves or chopped cilantro (optional)
We’ve used this recipe several times, it’s a good base to experiment with. Try varying the types of chile peppers and using white onions. If you like cilantro in your salsa, see this recipe instead.
